This classic garnish is superb for blending flavors in most recipes, adding richness and color to main dishes, soups, and casseroles. Clip parsley plants, rinse, place in a baggie and freeze for use all Winter.
Roast Chicken with Parsley
1 (3 to 4 lb.) chicken
salt and pepper to taste
1/2 c. olive oil
1/4 c. lemon juice
1 tbsp. minced thyme
1 bunch parsley
Wash and dry, salt and pepper chicken inside and out. Rub the bird inside and out with dressing made from oil, lemon juice, and thyme. Stuff the bird loosely with the fresh parsley and bake, uncovered at 350^F for about 1 3/4 hours. Serves 3-4.
