The word Thymus is Greek for courage. Throughout centuries, thyme plants have been used for traditions relating to this theme. Roman soldiers bathed in thyme water, European knights carried thyme tokens, and other folklore talks of thyme as being a home for fairies.
Lemon Thyme Vinaigrette
"1/3 c olive oil
2 tbsp lemon juice
2 tsp chopped fresh thyme
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp granulated sugar
1/4 tsp pepper
"Dressing: In small bowl, whisk together olive oil, lemon juice, fresh cut lemon thyme, mustard, salt, sugar, and pepper. Cover and refrigerate up to 1 day for extended use. Drizzle over salad or serve over fresh cut vegetables. "
