The absolute best lemon basil with large leaves and a sweet tangy flavor. Outstanding for pasta, pesto, salads, meat dishes, and vinegars.
Lemon Basil Pesto
2 c. fresh lemon basil leaves, packed
1/2 c. freshly grated Parmesan cheese
1/2 c. extra-virgin olive oil
1/3 c. pine nuts
3 garlic cloves, minced
salt and black pepper
Equipment needed: A food processor
Combine basil with pine nuts, pulse a few times in food processor. Add the garlic, pulse a few more times. Slowly add olive oil while the food processor is on. Add the grated cheese and pulse again until blended. Add salt and black pepper to taste. Makes one cup.
