Stevia plant leaves can be dried and used as a natural sugar substitute. Fresh leaves are excellent in fruit salads and teas or baked into bread, and are much sweeter than sugar.
Uses for Stevia Leaf
To make a liquid sweetener, pour 1 quart of boiling water over 1 tbsp. dried leaves. Allow to infuse. Refrigerate and use within a few days.
To make syrup, place 4 tsp. of dried, powdered leaves in a saucepan with 2 cups of water; simmer slowly for 10-15 minutes. Cool and refrigerate. Using too much stevia can result in excessive sweetness and an aftertaste. Always start with the exact amount called for in a recipe, or sometimes even a little less, then taste and add more if needed. Dried leaves can be used as a substitute for sugar. 1 tbsp. stevia = 1 c. sugar
