Spaghetti squash, or vegetable spaghetti, are part of the gourd family and come in colors that range from ivory to yellow/orange. When raw, the flesh is solid and similar to other raw squash, but when cooked, the flesh falls away from the fruit in ribbons or strands, like spaghetti.
