Zucchini is a summer squash that can reach nearly 3-ft. long, but usually harvested immature at 6-10”. As a squash, zucchini typically appear dark or light green, but some have yellow or orange col-oration. Although technically a botanical fruit, in a culinary context, zucchini is treated as a vegetable, and is usually cooked and presented as a savory dish or side dish.
