Minty fragrance with chocolate overtones, adds a refreshing crème de menthe flavor. Chocolate mint plant leaves are a popular choice for use in salads, teas, desserts, sauces, potpourri and as a garnish.

Chocolate Mint Cake

1 1/2 c. cake flour, sifted
1 c. sugar
1/4 c. cocoa
1/2 tsp. salt
1 3/4 tsp. baking powder
2 tbsp. chocolate mint leaves, chopped
2 eggs
1/3 c. butter, softened
1/2 c. water
1 1/2 tsp. vanilla

Preheat oven to 350^F. Spray a 9 x 13-inch pan with non-stick spray and dust with flour. Combine ingredients in order listed. Bake for 30 minutes or until a toothpick comes out clean. Cool 10 minutes. Sprinkle with powdered sugar and garnish with chocolate mint sprig.
